Crispy, Herby, Parmesan Roast Potatoes

You only need a few ingredients to make these crispy and delicious potatoes. They are great side dish to any meal. You could fry a little salmon and then wilt some spinach in butter on the same pan, and you've almost no cleaning up!

Potatoes are great carbs for non-purists! We all have to enjoy our food, right?

SERVES 8

prep time: 10 MINUTES

cook time: 35 MINUTES

total time: 45 MINUTES

INGREDIENTS:

  • 1kg potatoes, washed and quartered

  • 2 tablespoons good quality Basil Pesto

  • Herbes de Provence

  • Salt and black pepper, to taste

  • Add a few chilli flakes if you like

  • 3 tablespoons grated fresh Parmesan cheese

DIRECTIONS:

  1. Preheat oven to 200 degrees C.

  2. In a large bowl, combine potatoes and pesto. Toss to coat. Transfer potatoes to a large baking sheet or shallow roasting pan. Season with salt and pepper, to taste. Roast for 20 minutes and remove from the oven.

  3. Sprinkle parmesan cheese evenly over the potatoes and put the pan back in the oven. Roast for an additional 10-15 minutes or until potatoes are tender and crispy. Remove from the oven and serve warm
