Garlic & Lemon Roasted Chicken with Tomatoes and Red Onion

The beauty of using the oven is that once the food is in there, there's almost nothing to do!

 

 

Process: Preheat oven to 200ºC

Bring a pan with water to boil, place the 10 cloves of garlic and 2 lemons in the water and cook for 5 minutes. Place the garlic and lemons in a colander to drain.

Season with salt and pepper inside the chicken and stuff the chicken with the cooked garlic and lemons too and some of the rosemary sprigs.

Take a baking tray drizzle some olive oil in and place the chicken in it, place the chicken wings, tomatoes the rest of the uncooked garlic, red onions and the rest of the fresh rosemary. Drizzle some olive oil over the chicken and the tomatoes seasoning with salt and pepper.

Cook it in the oven for +1 hour depending on the size of the chicken.

Have a nice salad nest to the chicken.

Serves 4
