I prepare this saled without dressing, as this can be added at the table. For the dressing I prepare a simple vinaigrette using good quality balsamic vinegar, extra virgin olive oil and a pinch of salt.
Make it in a sealable jar or wide-neck bottle so that you can keep what you don't use in the fridge.
I like to wait until everyone is ready to eat before mixing in the vinaigrette. It adds to the show.
Vinegar is a wonderful addition to our daily diet and should be incorprated as much as possible.
Herbes de Provence, salt and pepper to season.
Lettuce if you like, it bulks it out a little
