50-75g goat feta cheese
1 small bundle fresh dill, finely chopped
1 tsp ghee or butter
1-2 avocado, mashed with a fork
2-3 tomatoes, finely chopped
4 spring onions, chopped
Juice from 1/2 lime
Frittata with Asparagus, Dill and Feta Cheese
Beat the eggs together, cut the asparagus into pieces, crumble the feta cheese and the chopped dill and place into the eggs. Heat up a frying pan to medium heat and add Ghee or butter, when the pan is warm all through pour the mixture over the pan and let it cook under low temperature put a lid on the pan and let it cook until cooked through
While the eggs are cooking, mix the avocado, tomatoes, lime juice and spring onions.
When the frittata is cooked place it on a serving plate and garnish with the avocado mixture.
